Since you're new in golf, I expect you're asking about tournaments in
general. It's up to the tournament. Lately TV has contributed to
those which have Monday 18 hole playoffs' demise. Sudden death is
more common nowadays, although sometimes they have a limited number of
holes to be played.

They play more holes--usually starting with 18 again, then a rotation of
a few holes near the clubhouse--until someone wins.
